Homemade Nutella Stuffed Banana Muffins

So I had overripe bananas and freshly made “Nutella”…I wanted to somehow incorporate the two. Once I stumbled upon this recipe on My Whole Food Life, it was like the universe was sending me a very clear message. I gladly complied. I’ve never been so excited to bite into a muffin…They are dense (in a good way), but not heavy. The sweetness is just right — the muffin itself is not very sweet but then the homemade Nutella filling brings it up ever so slightly to create the perfect amount of sweetness.

Ingredients (makes 12 muffins) – recipe from My Whole Food Life
1 3/4 cup whole wheat flour (all I have in my pantry is whole wheat flour, but I would love to experiment with other flours — if anyone does, let me know how it goes!)
2 overripe bananas, mashed
1/3 cup applesauce
1/4 cup maple syrup
1 t baking powder
1 t vanilla extract
1 T coconut oil
1/4 cup + 1 T almond milk
1/2 t salt
Homemade Nutella for filling and topping
Chopped hazelnuts for garnish

Directions:
1. Preheat oven to 350. Mix all of the dry ingredients in one bowl and the wet ingredients in another bowl. Pour wet into dry and mix until combined (I used my hands…)
2. Plop a little bit of batter into each muffin liner. Follow with a hunk of Homemade Nutella, then top it with some more banana batter. Repeat to fill all of your muffin liners.

3. Place in the oven for 17 minutes. I usually cut one open to look inside and make sure they’re done. Once done, take the muffins out of the pan to cool.

If you please, spread some more Nutella on top and garnish with chopped hazelnuts 🙂
