No Bake Energy Bars

It’s officially wedding week! My sister is getting married this Saturday and as part of my MOH duties, I made homemade energy bars and balls for the gift bags. Since I moved to Portland, I haven’t had the equipment or money to make many of things I want to make, so being here with my family is such a treat! I found this easy, yummy recipe on Food52, changed it a bit and went with it.

Put all the dry ingredients in one bowl and mix. A heaping pile of bird food!

Mix together wet ingredients: almond butter, honey, apple sauce. Pour wet into dry and mix until all combined and clumpy. Best to get in there with ya hands and give it a nice massage.

Pour glob into dish of choice and press the mixture down until it is all compact and level. Pop it in the fridge for a few hours or until solid enough to cut.

Ingredients (~18 bars depending on size):
1 1/2 cup oats
3/4 cups whole almonds
1/2 cup dried cherries
1/3 cup chopped walnuts
1/3 cup pepitas
1/2 cup shredded coconut, unsweetened
1/4 cup sunflower seeds
1/3 cup ground flax seed
1/2-1 tsp cinnamon
1/3 cup honey
1 cup almond butter
1/4 cup apple sauce, unsweetened
1/4 tsp vanilla extract

Directions:
1. Mix together all the dry ingredients in a large bowl (up to cinnamon). Since I used unsalted almond butter, I added about 1/4tsp salt…
2. Mix together the rest of the ingredients in a small bowl. Then pour the wet ingredients into the dry and mix until combined and it’s all just one big clump!
3. Press mixture down into a dish until it’s compact and level at whatever thickness you’d like. Freeze for a few hours or until solid enough to cut. Then cut into whatever shape and size you please.

These bars are soft, chewy and full of texture, protein and fiber. The cranberries, pepitas and warm cinnamon remind me so much of the Fall. I think the wedding guests will be happy!
