Next homemade gift bag treat — energy balls! Almond, coconut and chocolate balls naturally sweetened by maple syrup and dates. These could be a snack on the go or a healthy dessert. Good luck making them last!
Ingredients: (makes ~ 30 balls depending on size)
1 cup raw almonds
1/2 cup shredded coconut, unsweetened (+more for coating)
1/3 cup cocoa powder, unsweetened
2.5 tbsp maple syrup
1/4 cup almond
1 cup medjool dates, pitted
1. Put almonds, coconut and cocoa powder into food processor and whiz it up for about 20 secs.
2. Add in the maple syrup, almond butter and process for another 20 secs
3. Then add the dates and process until a paste/dough forms. If it is too dry, add some water.
4. Roll into balls and coat in shredded coconut. Store in the fridge!
