Banana Buckwheat Waffle for One

I had waffles on the brain on this rainy morning. Buckwheat flour is my new favorite sub for pancakes and waffles. It has a wonderfully earthy and nutty flavor. Apparently buckwheat comes from a fruit seed related to rhubarb…Also, it’s very rich in protein and fiber so it’s sure to fill you up! When I eat pancakes or waffles I find that I’m even hungrier than before I ate one…maybe that’s just me, but these waffles are much more hearty and filling.


1/4 cup buckwheat flour
1/4 cup white whole wheat flour (or sub GF all purpose blend)
1/4 tsp salt
1.5 tsp baking powder
a dash or two of cinnamon
1 egg
1/2 banana, mashed
1.5 tsp coconut oil, melted
1.5 tsp agave
1/3 cup almond milk

1. Mix all the dry ingredients together. Mix all the wet ingredients together. Pour wet into dry and mix until just combined (don’t overmix!)
2. Pour batter into your heated waffle iron and let it work it’s magic. Top with sliced bananas, strawberries and some mint! And of course maple syrup…

Well done, waffle making machine…well done.

Consumed along side a strawberry maca mint smoothie…

Generously drizzle with maple syrup…reserve more for dipping!
