I visited my sister last week in Utah and we always made smoothies to start our breakfast. Inspired by her brand new Vitamix, she got pretty creative and put things like beets, ginger and lemon in her smoothies. I’ve always just stuck with pure fruit smoothies, but now I’m putting beets in my berry smoothies!
The beets give the smoothie a subtle earthy taste and the lemon adds a lovely tang. I added figs for some sweetness and texture. YUM!
1/4 cup frozen blueberries
1/4 cup frozen raspberries
1/2 of a banana
1/4 of a lemon (skin and pith removed)
1/4 cup plain yogurt
2 dried figs
1/2 of a small beet, uncooked
2 Tbsp ground flax seed
3/4 cup water
Place all ingredients in your blender and blend until smooth!
In go the berries, nanner and lemon!
Mmmm look at that beautiful berry-beet-y color.
Top with some sliced nanners and a little ground flax seed!
