Taco Chicken Lettuce Wraps

Yummy taco chicken mixture topped with tangy, rich avocado cream and salsa all bundled up in a lettuce wrap.

Ingredients (serves 4):
2 tbsp olive oil
1 onion, finely chopped
1 tsp cumin
1 tsp chili powder
1/4 tsp red pepper flakes
1/2 tsp salt
1 garlic clove, minced
1 red bell pepper, chopped
1 cup spinach, chopped
1 lb ground chicken
1/4 cup cilantro, chopped
lettuce wraps – I used butter lettuce

Cilantro Avocado Cream:
1 large ripe avocado
juice from 2 limes
1 garlic clove, minced
1/4 cup cilantro
1/3 cup olive oil
1/2 tsp cumin
1/4 tsp salt

Additional toppings and sides: salsa, fresh cilantro, fresh tomatoes, cheese, tortilla chips…

Directions:
1. For cilantro avocado cream, place all ingredients in a blender and blend until smooth. Add more olive oil if it is too thick and salt to taste. Place in fridge while you make the chicken.
2. Heat 2 T olive oil in pan on medium heat. Add onion and spices and cook until translucent then add garlic and red bell pepper and cook another 3 minutes or until peppers soften. Add spinach and cook until it starts to wilt. Add ground chicken and cook until chicken is cooked through. Make sure you break up the chicken into little bits while it cooks. Also, taste it and add more seasoning if needed. At the end, add the chopped cilantro and stir.
3. Take your lettuce wrap and place the chicken mixture inside and top it with the cilantro avocado cream, salsa and anything else you’d like.

This was the only picture I got — gobbled it down too fast! Trust me, the spicy taco chicken with the rich avocado cream and salsa bundled up in a light lettuce wrap created the perfect bite.
