Middle Eastern Chicken Burgers

These healthy and hearty burgers are brilliant! The warming spices and the fresh parsley create a wonderful flavor combination and the yogurt makes them super moist and light. Slip that into a pita and slap some yogurt-tahini sauce on top and you’ve got yourself a perfect bite.


2 tbsp olive oil
1 onion, diced
1/2 tsp cinnamon
1 tsp coriander
1 tsp cumin
1/2 tsp paprika
1/4 tsp red pepper flakes
1 tsp salt
2 garlic cloves, minced
1/2 cup parsley, chopped
1 lb ground lean chicken
1/4 cup plain yogurt
4 pitas, warmed

Yogurt-tahini sauce: combine and mix ingredients in a bowl and refrigerate
1/2 cup yogurt
3T tahini
1T lemon juice
1 clove garlic, minced
1/2 t salt
1/4 cup parsley, chopped

1. Heat olive oil in a pan on medium heat. Add onion and spices and salt and saute until onion is translucent. Add garlic and saute for another minute. Pour into a bowl, stir in the parsley and let the mixture cool off a bit.
2. Add the ground chicken and yogurt to the bowl and mix it all up (I find using your hands to be most efficient and effective). Once well combined, form the chicken into patties.
3. Heat a some olive oil in a grill pan on medium-high heat. Once hot, put the burgers onto the grill pan and cook about 6 minutes on each side (that’s a complete guess).



Yogurt-tahini sauce!


I accompanied it with a light salad of chickpeas, cucumbers, tomatoes, onion, olives and parsley in a simple lemon-olive oil dressing.

The yogurt-tahini sauce really takes these burgers up a notch. The tangy yogurt and creamy tahini combined with fresh herbs and lemon juice compliment these burgers perfectly.
