As a pesto enthusiast, I like to try different variations. I looked in my pantry and saw that I had almonds and nutritional yeast, so that took care of the nut and “cheese” aspect. With pesto on the brain, I trekked it to Trader Joe’s and bought basil and arugula. I love the addition of the arugula, it adds a nice fresh, peppery flavor.
1 cup basil
1/2 cup arugula
1/4 cup almonds
1-2 garlic cloves
1/4-1/2 cup olive oil
juice from 1/2 lemon
1-2 T nutritional yeast (or regular Parmesan cheese)
salt and pepper to taste
1. Put basil, arugula, almonds and garlic in food processor and pulse until they are all combined.
2. With processor still on, add the olive oil so it can emulsify.
3. Finally, add the lemon juice, nutritional yeast and salt&pepper to taste.
